It’s funny how a woman’s definition of beauty can change once they become a mom.  I’m sure we’ve all seen the photo of Taryn Brumfitt and her “before” pic of herself in a bikini, competing in a bodybuilding competition – and that was after having 3 kids!  Fast forward a few years later, strict diet abandoned, and you’ll see Taryn’s “after” pic.  A photo of a still-gorgeous woman, with just a few more rolls than she had before.  Looking a bit more “real”.

I’ve been struggling with weight issues pretty much my whole life.  I’ve been fat, skinny, and a little bit of in-between through the years and, honestly, have never been happy with the way I looked.  Can you imagine?  How sad is that?  Never, ever satisfied with my body.  Ever.  Ugh.

Mother’s Day Gift Ideas for Travelers #eBayMobile


As Mother’s Day rolls around this year, I’ve been thinking more and more about travel and travel items I’d like to have (the fact that I am traveling again next week makes me think about them even more).  Travel items and accessories can be pretty expensive though, and in order to get to travel even more, my family needs to save money wherever we can.  I still want those travel items though, and I figured the best place for me to get them on the cheap is…eBay!

Digital Luggage Scale – This may be a frivolous purchase to some, but as a person that had to open her suitcase in the middle of an airport in Mexico and add on layers of clothing on and stuff a pair of shoes in her purse in order to lessen the weight of her suitcase – it’s totally worth the money!  Knowing what to to before you head to the airport will save so much time.  I almost missed my flight that day!

Travel Insert Organizer – My purse is an absolute mess.  I hate having to dig through piles and piles of junk just to find my keys!  Having a bag organizer would make it so easy to whip out my passport, plane tickets, or even my lip gloss in a rush.  No more digging!

Rechargeable Power Bank – The last thing I need when visiting somewhere new is for my cell phone to die while in the middle of using my GPS navigation, or taking the next Instagram-worthy shot.  I’d use this all the time, so it’s a totally versatile gift – and well worth the money.

Travel Journal – These remind me of the diaries I used to keep as a tween/teen.  I’d love to write in it at night once the family’s gone to bed to reflect on the day we’ve had.  Sure, I could use my laptop to do this, but the simple elegance of these travel journals make me want to write in them all the time.  Plus – they’re pretty!

A Great Digital Camera – eBay is the perfect spot to buy a used – but still great DSLR camera.  They can be really expensive if you purchase them new and, especially for someone with little camera experience, can be a great first camera.  Already have a good DSLR camera?  eBay has some great lenses too!

The eBay Mobile app is a great way for me to keep track of all those great travel items I’ve been eyeing.  The recent updates to the app make it easier than ever to use.  There’s improved notifications, a simple selling flow (especially easy if you use the barcode scanning in the app to upload details on media, electronics and home items), bigger pictures, and more search refinement options (color, size, brand, condition and category specific like megapixels).  I love keeping my phone handy to check for any last minute deals!  You can download the eBay mobile app for free using any app store.

Semi-PINspired: Maple Pecan Sticky Buns

I’m calling this post “Semi-PINspired” because I didn’t get the actual recipe from Pinterest, BUT I will be posting my version of the recipe, so that’s “Semi-PINspired”, right? I am totally committed to posting a new recipe I’ve never made but found in one of my cookbooks, magazines, or random flyers (you can read the original recipe post HERE) and this one comes from the Winter 2007 issue of Kraft Food & Family magazine.  Talk about old school, right?  I don’t consider myself to be a hoarder, but after holding on to magazines for 5 years…hmm, maybe.

Anyhow, I knew that all my siblings were coming over on Mother’s Day for brunch with my mom (we tried making reservations at several places, but when you call restaurants on Puerto Rican time – i.e. very, very late – they tend to be booked.)  My husband and daughter commited to making the entire breakfast – which was all good with me – but I thought it might also be nice to try something new.  I helped them out by making Maple Pecan Sticky Buns and, let me just say, they were a BIG hit!  Every last bite was G.O.N.E.  They aren’t too difficult to make, so consider trying these with your family.

Once again, I’ve used minimal ingredients – the only way to go in my book!

Then it’s super easy – take some cream cheese, roll in cinnamon/sugar mix and place in the center of a biscuit.  Roll up and then dip the top of the bun into butter, then into a mix of cinnamon and sugar.

Place in a fluted tube pan that has some chopped pecans and a butter/maple syrup mix.

After the bottom of the pan is full, start another layer on top.

Bake for 30 minutes, and this is what you get.  Seriously – good stuff!

Semi-PINspired: Maple Pecan Sticky Buns
Recipe Type: Breakfast
Author: Amanda, Original Recipe by Food and Family Magazine
Prep time: 20 mins
Cook time: 30 mins
Total time: 50 mins
Serves: 20, 1 bun each
Semi-homemade sticky buns…be careful, they’re really good!
  • 3/4 cup chopped pecans
  • 1/2 cup (1 stick) butter or margarine
  • 1/3 cup pancake syrup
  • 1/2 cup sugar
  • 1 tsp ground cinnamon
  • 2 cans (12 oz each) refrigerated flaky buttermilk biscuits
  • 1 pkg (8 oz) cream cheese, cut into 20 cubes
  1. Preheat oven to 400 degrees. Spray fluted tube pan with cooking spray. Sprinkle pecans evenly on buttom; set aside. Melt 2 Tbsp of the butter in small microwaveable bowl. Add syrup; stir until well blended. Drizzle over pecans in pan; set aside.
  2. Melt remaining 6 Tbsp of butter; set aside. Mix sugar and cinnamon in shallow dish; set aside. Separate dough into 20 biscuits; press each slightly to 1/4-inch thickness. Roll cream cheese in cinnamon sugar mixture until evenly covered on all sides. Place 1 cream cheese cube in center of each biscuit circle; gather up sides of dough to enclose filling. Press edges of dough together to seal; roll into a ball. Dip top of each ball into remaining butter, then into cinnamon sugar.
  3. Arrange half of the balls, cinnamon sugar sides up, in prepared pan. Repeat with remaining balls to form a second layer. Drizzle with any remaining butter; sprinkle with any remaining sugar.
  4. Bake 30 minutes, or until golden brown. Cool 1 minute in pan; invert onto serving platter. Scrape any remaining pecans left in pan; spoon over buns. Serve warm.


MeMeMe Monday 5/14/12

Once again, it’s time to tell you guys a little but more about ME, Amanda, the blogger behind Thoughts from Her.  Here are a few things you might not know.

1.)  I wish I could go to work every day looking like I’d just walked off the set of AMC’s Mad Men.  I’d like to think I most closely resemble Joan *ahem* and she looks smokin’ in just about anything.  The hairstyles are so simple and cute and the curve-hugging dresses are so sexy, yet so feminine at the same time.  Granted, I realize that the office environment wasn’t as friendly towards women as it is today, but I’d just like to dress the part, not necessarily live it, ya know?

I could go to work dressed like this, but then I might find myself friendless.

2.)  I watched a video I found on Crafty Gemini’s YouTube channel and I actually made two pillowcases with my newly-purchased sewing machine!  Her video was so easy to follow and I think she’s wildly talented.  If you want to learn how to sew something, go check her out!

3.)  I don’t cook breakfast…like, ever.  I figure that I cook dinner most nights, so if my family is craving something other than cereal, they can make it themselves.  Here’s a pic of our Mother’s Day feast!    We had 12 people over at 9am for breakfast.  Executive chefs?  None other than my husband and daughter…and it was DEE-licious!

4.)  Speaking of my daughter, my oldest is a teenager and she drives me NUTS most some of the time.  She has officially transitioned from being my “sweet little girl” too my eye-rolling, attitude-prone teenager.  Most people say I’ll “get her back” once she’s in her 20’s, but that’s a long, long, long time from now. L

5.)  I am terrified of painting the walls in my home.  Ok, “terrified” *might* be a bit exaggerated, but still.  People tell me that “it’s just paint, you can paint over it if you don’t like it”, but that’s a ton of work.  Moving furniture, painting, and moving the furniture back takes all day and I just don’t have that kind of time.

Can you believe that Mother’s Day is only 4 weeks away?!?!  Honestly, I don’t think any other holiday stresses me out as much as Mother’s Day – not even Christmas!  Christmas is all about the *whole* family – everybody celebrated equally.  But Mother’s Day is all about MOM, and I just really don’t want to disappoint.  Every year it gets harder and harder to come up with things to give my mom.  I mean, how many times are a bouquet of flowers really going to cut it?  I just want my mom to know how much she is loved and appreciated – and it gets harder to do year after year.

This year, I’m going to do something a little different.  Something I’ve never given her before.  I’m going to head on over to Shutterfly and personalize some photo gifts for her!  Have you guys used Shutterfly before?  Whoa!  I mean, I knew that you could do a lot with a photo, but holy smokes – they’ve got so many things I’ve never even thought of!  I mean, just look at all the cool things you can do with just a few photos!

All-New Curious George Episode on PBS KIDS!

All-New Curious George Mother's Day Episode Celebrates Hispanic Heritage May 6, 2011 on PBS KIDS GO! (Check Local Listings)


The new episode, premiering Friday, May 6th, 2011 (check local listings), features George helping his friend, Marco, surprise his Mami with a birthday party.  Together, they make a piñata and other festive decorations while Marco's sister and The Man with the Yellow Hat prepare some of the guest of honor's favorite foods.

Be sure to tune into the episode to learn about Hispanic culture and help George and Marco celebrate El Día de la Madre in this special episode of Curious George.

Personally, I think it's wonderful that the folks at WGBH Boston decided to include Hispanic heritage in this fun Curious George special.  We are crazy about monkeys in this house (everything from my son's bedroom walls to his pajamas seem to be covered in them) and it was great to get a peek at the new episode.  And, being a Latina mom, I can appreciate WGBH for including us in their line-up.  Think you've never heard of WGBH Boston – think again!  They've produced some of the best children's shows on PBS including: Arthur, Postcards from Buster, Between the Lions, and more!

And – in addition to the Mother's Day special – Curious George will be re-airing two of its favorite episodes featuring George's new friend, Marco.  George and Marco Sound it Out airs Tuesday, May 3rd, 2011 and George's Home Run airs Thursday, May 5th, 2011.

My family and I really enjoyed the episodes and we're sure you will too!  Be sure to join in on the fun and tune in to PBS KIDS to celebrate Mother's Day with George & Marco!
